Cook Once, Eat Twice Tuesday!
Simplify day 1 by using a slow cooker to cook dried beans. Add seasonings to give you the flavor profile you want. They make a great side dish or can be included in another recipe. Then, use them again during the week (day 2) in a different recipe. For example, black beans can be pureed into a hummus or bean dip to each with cut veggies or pita chips for a snack.
